SWEDISH MEATBALLS

This makes 70-80 meatballs - or 2-3 meals depending on your family size. Its a little time consuming, but worth the effort!

6 slices of bread, or about 2 sleeves of saltines
1.5 c heavy cream
1 T butter (divided)
1 medium onion
1lb ground beef
1lb ground pork
3 eggs
3 T brown sugar
1 T salt
3/4 t black pepper
3/4 t nutmeg
3/4 t allspice
1/2 t ground ginger
1 c chicken broth


Cooking Directions:
* Mix cream and crackers/bread and let sit while you cook onion.
* cook onion with 1 t butter until tender (5min)
* mix in meats, eggs, brown sugar, salt, pepper, nutmeg, allspice, and ginger and cream soaked crackers/bread.
* Roll mixture into balls and fry in 1 t butter (It takes a few batches for this much mixture, use the last teaspoon of butter when needed)
* brown balls on sides and then put them into a casserole pan (it'll fill 2 9x13 pans)
* pour 1/2 cup chicken broth into the bottom of each pan
* bake 40min at 350*
* remove from liquid and let cool

Freezing Directions:
* Once cool, freeze the meatballs on a cookie tray for a couple hours. This will prevent them from sticking together.
* Once frozen, move them into gallon freezer bags. I have a family of 6, so I freeze 35-40 in two separate bags. If your family is smaller, divide it in three!

Reheating Directions:
* Let thaw on counter and/or microwave them till warm.
* To make sauce, mix together 1/4 c flour with 1/4 c butter in a skillet till a paste forms.
* add 3 c beef broth (or 3 c water and 1 T beef bullion)
* finish by adding in 6oz sour cream
* serve meatballs and sauce over egg noodles or spaetzle
** alternatively, I will cheat and buy the sauce packets from IKEA or the grocery store **
