SHEPHERD'S PIE

This makes TWO freezer meals!

First Layer:
3lb ground beef or ground turkey
1 T minced garlic
1 small onion, finely chopped (I often use a few teas. onion powder)
2 cans cream of mushroom soup
2 12oz bags of frozen mixed veggies


Topping:
12 medium-large russet potatoes
2-3T butter (I don't measure, sorry!)
milk (sorry, I don't measure this either!)
1-2 T garlic salt (just to taste... you guessed it, I don't measure)
2-3 c shredded cheese (I like the mexican blend Sams sells)

Optional - replace potatoes, milk, butter & garlic salt with boxed potatoes and add cheese to the top. Tip: Cook the boxed potatoes in broth for extra flavor

Cooking Directions: 
* brown ground beef or turkey with onion and garlic
* drain
* mix in 2 cans of cream of mushroom soup and frozen veggies
* layer meat mixture on bottom of 2 casserole pans.
* chop and boil potatoes, drain
* mash potatoes while you add butter, milk, garlic salt & cheese to taste
* layer half of potatoes over meat in each pan
* sprinkle with remaining cheese

Freezing Directions:
* Do not bake before freezing
* Freeze meal in 2 casserole pans
* Cover with saran wrap, then foil. 

Reheating Directions:
* Thaw and bake 350* for 25-30 minutes

* Serves 16
