Make Once, Eat Twice Lasagna

This recipe is based off Taste of Home's recipe, but with a few changes by one of our moms that makes it extra awesome. See the original recipe here.

1 package of oven ready lasagna noodles (16 oz)
2 lbs of ground turkey
1 lb of ground italian sausage
1 box of frozen chopped spinach
1 T minced garlic
3 jars (26oz each) of your favorite spaghetti sauce
3 cups cottage cheese
1/3 c water
5 cups shredded part-skim mozzarella cheese, divided
1 c grated Parmesan cheese, divided
1/2 c grated Romano cheese
1 T dried parsley
1 t salts
1/2 t pepper

Cooking Directions:
* Prepare 2 lasagna pans by spreading 1/2 cup of sauce on the bottom.
* Brown ground turkey and sausage together with garlic, drain.
* Thaw spinach and wring out to remove as much extra moisture as possible
* Mix meat with spinach in a large bowl and add remaining spaghetti sauce.
* In a separate large bowl, mix cottage cheese, water, 3 1/2 c mozzarella cheese, 1/2 c Parmesan cheese, 1/2 cup Romano cheese, salt pepper and parsley.
* Layer each pan with 3 noodles, then 1 cup of the cheese mixture and then 1 1/2 cups of the meat mixture. Repeat layers twice.
* Top with remaining Parmesan and Mozzarella cheeses.
* If cooking same day, bake covered for 45 minutes at 375* then uncover for 10 more minutes.

Freezing Directions:
* Cool and cover with plastic wrap, then foil. Freeze up to 3 months.

Reheating Directions:
* Thaw in fridge overnight
* Remove from fridge 30 minutes before baking.
* Remove plastic wrap and recover with foil. Bake at 375 degrees for 60-70 minutes. Then uncover and bake 10 minutes longer.
* Let stand 10 minutes before serving.
* This can be baked straight from the freezer, just expect it to take 1 1/2-2 hours.

* Serves 16-24 (8-12 each)
