VEGGIE BEEF SOUP


1 lb beef stew meat (or hamburger if you desire)
1 diced onion
3-4 stalks chopped celery
4-6 cups beef broth (or from bouillon)
1 bag (1 lb) mixed vegetables
1 or 2 cans diced tomatoes (to taste)
Fresh Basil to taste (one packed teaspoon?)
Dried Oregano to taste (2 teaspoons?)
1 small can tomato sauce.
Salt/pepper to taste.

Cooking Directions:
* Brown meat until mostly browned but not ‘done’. 
* Add to soup pot with diced onion, celery and beef broth. Bring to a boil, add mixed vegetables, tomato sauce and diced tomatoes. Season to taste.

Freezing Directions:
* Once cool, put in gallon freezer bag and freeze - lay it flat overnight so that it freezes flat and makes it easier to store in the freezers of meal swap moms.

Reheating Directions:
* Thaw and warm on stove or microwave.

NOTES: This is REALLY flexible. Try using chicken and flavor it more southwestern seasonings (cumin, lime etc)
