3/4 lb andouille sausage, or Italian sausage (I use Italian)
1 cup chopped onion
½ cup green peppers, chopped
½ cup yellow peppers, chopped
1 can (8 oz) tomato sauce
1 tsp oregano
1 tsp thyme
2 (15 oz) cans red beans, drained and rinsed
1 Tblsp sherry (optional)
3 green onions (garnish)
Tabasco sauce (if desired)
6 cups hot cooked rice.
Cooking Directions:
* Prepare rice according to package directions
* Brown sausage and onions until onions are translucent and meat is no longer pink.
* Add in peppers, stir and sauté 5 min.
* Add tomato sauce, beans, spices and salt & pepper to taste. If you are using sherry, add this too. Simmer 10 minutes
Freezing Directions:
* Let cool and put in gallon freezer bag. Freeze for up to 6 months.
Reheating Directions:
* Thaw in fridge overnight, warm on stove or in microwave until warmed through.
* Serve over hot cooked rice with green onions as garnish. Add Tabasco if desired.
* Serves 6-8
