MARVELOUSLY MOIST MEATLOAF


  • * Makes 2 meatloaves - this recipe has not been used in our freezer exchange, but its one I freeze all the time! it's our family's favorite meatloaf.

  • 1 c packed brown sugar
  • 1 c ketchup
  • 3 lbs lean ground beef
  • 1 1/2 c buttermilk
  • 4 eggs
  • 1 T salt
  • 1/2 teaspoon black pepper
  • 2 t garlic powder (optional)
  • 1 medium onion, chopped
  • 1/2 teaspoon ground ginger
  • 1 1/2 c panko bread crumbs

Cooking Directions:
* Press 1/2 of brown sugar evenly in the bottom of each loaf pan. Cover each with ketchup.
* In a large bowl, mix remaining ingredients together with your hands, until well blended. 
* Shape 2 loaves out of meat mixture and place in loaf pans, on top of ketchup. 
* Bake for one hour at 350 degrees F, until internal temperature reaches 160 degrees F.
* Take out of oven and turn it upside down onto a cooling rack or plate lined with many paper towels - this will help it cool AND drain of grease.

Freezing Directions:
* Once cool, freeze in gallon freezer bag up to 3 months. Get as much air out of the bag as possible.

Reheating Directions:
* Thaw on counter for 8 hours and microwave to warm.
* OR thaw in microwave

HINT: Halve or slice meatloaf before you freeze it, then it will thaw much faster and not lose quality.
